;Duarte Estrada, Saúl AndrésConcha Vargas, Guillermo VicenteLa incorporación de agentes bioactivos en matrices alimentarias para desarrollo de alimentos funcionales, es un tema emergente de sumo interés en las industrias de alimentos. Dentro de los agentes bioactivos más relevantes utilizados en los alimentos funcionales, se encuentran loa agentes antimicrobianos. En particular los agentes antimicrobianos preferidos son los de origen natural, como es el caso de aceites esenciales. Esta investigación se orientó a investigar el aceite esencial de tomillo, vulnerable a la oxidación, LUV y temperatura perdiendo biodisponibilidad y bioactividad. Es por estos motivos que se llevó a cabo la microencapsulación de aceite esencial de tomillo por gelificación iónica. Las técnicas de microencapsulación están siendo actualmente muy usadas como herramienta para estabilizar y controlar la liberación a una tasa y/o lugar específico de compuestos activos, las tecnologías de microencapsulación están permitiendo, en los últimos tiempos, desarrollar alimentos y otros tipos de productos con nuevas propiedades, más seguros y más saludables, así como ingredientes funcionales y aditivos novedosos con mejores propiedades. En relación a lo anterior se llevó a cabo una investigación donde se realiza la comparación de dos técnicas de microencapsulación con gelificación iónica (goteo y motoaspersión). Algunos resultados obtenidos fueron el tamaño de las partículas por el método de jeringa fue: 453 ± 64 µm y el tamaño de las partículas obtenidas por la metodología de aspersión tuvo como tamaño promedio 108 µm, encontrándose diferencias significativas entre sí. Otro elemento que se puede analizar es la capacidad de carga, donde las partículas de alginato fabricadas por la técnica de jeringa fueron las que presentaron la mayor capacidad de carga 46,64 ± 7,88 %. Las otras partículas fabricadas por aspersión, presentaron capacidades de carga significativamente inferiores a las partículas GI. Una medición de igual manera importante es la medición del efecto antimicrobiano de las microcápsulas (condiciones in vitro) donde se midieron los diámetros de inhibición, teniendo un efecto inhibidor de halos ≥ 11 mm las realizadas con la técnica de aspersión. - PublicationObtención, evaluación antimicrobiana y antioxidante de extracto de aceite esencial de Peumus boldus.(2016-08)
;General Flores, Carlos TomásBenavides Valenzuela, Sergio FermínLos aceites esenciales son productos químicos intensamente aromáticos, volátiles por naturaleza y poco densos, generalmente destilables con agua o en corriente de vapor, y que son importantes en la industria cosmética (perfumes y aromatizantes), de alimentos (condimentos y saborizantes) y farmacéutica (saborizantes). Este proyecto fue orientado en la caracterización del aceite esencial de Peumus boldus. La extracción del aceite esencial se realizó mediante el proceso de arrastre de vapor, obteniendo un rendimiento de 1,72%. Para determinar la actividad antimicrobiana de este aceite, se probó su efecto en cepas de Staphylococcus Aureus y Escherichia Coli usando la técnica de difusión de agar. Encontrándose un mayor efecto antimicrobiano sobre la cepa de Escheriachia Coli. Por otro lado la actividad antioxidante se determinó mediante el método del radical libre de DPPH, y se encontró que el aceite de boldo posee concentraciones efectivas mayores a 30%, de 3 [μl] de aceite esencial. El análisis financiero determinó valores para el VAN (10%) de $ 2.723.525 y el TIR de 22%, determinándose como proyecto factible para implementar.
